Switch to a breakfast that contains adequate, protein, fibre, fats and veg.
WHY?
When we get enough of these nutrients early in the day, hunger and cravings are managed and energy is high. It is MUCH easier to stick to a healthy plan throughout your day when you are full and satisfied.

The recipe below is a simple and convenient way to achieve that.
Healthy and yummy vegetable Frittata
- grated up vegetables. Choose your favourite or whatever is left in your fridge. I like carrots, zucchini, mushrooms, cherry tomatoes.
- 6 eggs
- combine in a baking tray
- top with small amount of grated cheese (lower fat) and a SMALL amount of diced bacon (a little goes a long way) and its got the SMELL factor when baked in the oven. You know what I mean.
- bake for approx. 25 minutes or until cooked and cheese is golden
- serves 4 – 6. Depending on how hungry you are
Added optional extras
- left over roast pumpkin (yum)
- tin of tuna or salmon
- dollop of low fat smooth ricotta
- cracked pepper on top
- layer of mountain bread on the bottom for crunch (pictured) *** this version does not re-heat well
So quick and so simple
The beauty is that you can make it at the beginning of the week and take a portion each day. (lasts up to 5 days)
You can eat it hot or cold
You can change it up a little each week.
